Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon sesame seeds
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the peeled and cut carrots with olive oil, honey, cinnamon, cayenne pepper, salt, and pepper. Mix well to ensure the carrots are evenly coated.
  3. Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, turning them halfway through, until they are fork-tender and caramelized at the edges.
  5. In the last 5 minutes of roasting, sprinkle sesame seeds over the carrots to toast them lightly.
  6. Once done, remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.

💡 Chef's Notes

Serve the roasted carrots on a platter, drizzled with any remaining glaze from the baking sheet, and sprinkle some extra sesame seeds on top for added texture and visual appeal.
