Sweet Corn Fritters Flavorful and Easy Recipe Guide
Ingredients
- 1 cup fresh corn kernels
- 0.5 cup all-purpose flour
- 0.25 cup cornmeal
- 1 large egg, beaten
- 0.25 cup milk
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup chopped green onions
- 0.25 teaspoon smoked paprika
- to taste oil Olive oil or vegetable oil for frying
Instructions
- In a large mixing bowl, combine the corn kernels, flour, cornmeal, baking powder, salt, pepper, and smoked paprika. Stir until well mixed.
- Add the beaten egg and milk to the dry ingredients and mix until just combined; be careful not to overmix. Fold in the chopped green onions.
- Heat a non-stick skillet over medium heat and add a small amount of oil, enough to coat the bottom of the pan.
- Once the oil is hot, drop spoonfuls of the fritter batter onto the skillet, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Repeat with remaining batter, adding more oil to the skillet as needed.
