Ingredients

  • 1 cup fresh corn kernels
  • 0.5 cup all-purpose flour
  • 0.25 cup cornmeal
  • 1 large egg, beaten
  • 0.25 cup milk
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup chopped green onions
  • 0.25 teaspoon smoked paprika
  • to taste oil Olive oil or vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the corn kernels, flour, cornmeal, baking powder, salt, pepper, and smoked paprika. Stir until well mixed.
  2. Add the beaten egg and milk to the dry ingredients and mix until just combined; be careful not to overmix. Fold in the chopped green onions.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil, enough to coat the bottom of the pan.
  4. Once the oil is hot, drop spoonfuls of the fritter batter onto the skillet, flattening them slightly with the back of the spoon.
  5. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  7. Repeat with remaining batter, adding more oil to the skillet as needed.

Serve warm, garnished with green onions or a dollop of sour cream or yogurt.
