Ingredients

  • 1 pound ground beef (or turkey)
  • 1 tablespoon taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 12 small flour or corn tortillas
  • 1 whole avocado, diced
  • 0.5 cup sour cream
  • 1 bunch fresh cilantro, for garnish
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, salt, and pepper. Cook for another 5 minutes, until heated through.
  4. While the meat mixture cooks, press each tortilla into a muffin tin to form cups. You may need to trim the edges slightly to fit.
  5. Bake the tortilla cups for 8-10 minutes until they are golden and crispy.
  6. Remove the tortilla cups from the oven and fill each one with the seasoned meat mixture.
  7. Top each taco cup with a generous sprinkle of shredded cheese. Return to the oven for another 5 minutes, until the cheese has melted.
  8. Once out of the oven, let them cool for a couple of minutes before carefully removing them from the muffin tin.

💡 Chef's Notes

Arrange the taco cups on a large platter, garnish with diced avocado and fresh cilantro. Serve with a side of sour cream and lime wedges for added flavor!
