Ingredients

  • 1 pound ground turkey
  • 0.5 cup breadcrumbs (preferably panko)
  • 0.25 cup green onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 egg lightly beaten
  • 0.25 cup soy sauce (low sodium)
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)
  • to taste salt and pepper
  • for garnish toasted sesame seeds
  • for garnish (optional) fresh cilantro

Instructions

  1. In a large mixing bowl, combine the ground turkey, breadcrumbs, green onion, garlic, ginger, and egg. Season with salt and pepper. Mix until all ingredients are well incorporated.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Form the turkey mixture into small meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for about 20 minutes or until they are cooked through and lightly golden.
  5. While the meatballs are baking, prepare the teriyaki sauce: In a small saucepan, combine the soy sauce, brown sugar, and sesame oil. Bring to a simmer over medium heat.
  6. Once simmering, stir in the cornstarch mixture and continue to cook until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
  7. When the meatballs are done, remove them from the oven and transfer them to a large bowl. Pour the teriyaki sauce over the meatballs and gently toss to coat them evenly.
  8. Serve the teriyaki turkey meatballs warm, garnished with toasted sesame seeds and fresh cilantro if desired.

💡 Chef's Notes

Use low sodium soy sauce for a healthier option.
