Ingredients

  • 1 whole ripe pineapple, peeled and diced
  • 2 whole kiwis, peeled and sliced
  • 1 whole mango, diced
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 whole banana, sliced
  • 0.5 cup blueberries
  • 1 whole orange, segmented
  • 1 whole lime, juiced
  • 2 tablespoons honey or agave syrup
  • to taste none fresh mint leaves for garnish

Instructions

  1. In a large mixing bowl, combine the diced pineapple, kiwi slices, mango, banana, blueberries, and orange segments.
  2. Gently toss the mixed fruit together to combine, being careful not to mash the banana.
  3. In a small bowl, whisk together the lime juice and honey until smooth.
  4. Drizzle the lime-honey mixture over the fruit and gently mix to coat all the ingredients evenly.
  5. Finally, sprinkle the shredded coconut over the top of the salad and give it a light toss.
  6. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Before serving, garnish with fresh mint leaves for an added burst of color and flavor.
