Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper diced (any color)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 head romaine lettuce, separated into leaves
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup corn (fresh or frozen)
  • 0.25 cup fresh cilantro, chopped
  • as needed lime wedges for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened and fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes until browned and cooked through.
  3. Stir in the diced bell pepper, chili powder, cumin, and paprika. Season with salt and pepper. Cook for another 3-4 minutes until the peppers are tender.
  4. While the turkey mixture cooks, prepare the lettuce wraps by rinsing and patting them dry. Set aside on a platter.
  5. Once the turkey mixture is done, remove it from heat. Begin assembling the wraps by placing a spoonful of the turkey mixture into the center of each lettuce leaf.
  6. Top each wrap with slices of avocado, halved cherry tomatoes, corn, and a sprinkle of fresh cilantro.
  7. Squeeze lime juice over the wraps for an extra zing, and serve immediately.
