Turkey Taco Lettuce Wraps Quick and Flavorful Meal
Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper diced (any color)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- to taste salt and pepper
- 1 head romaine lettuce, separated into leaves
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 0.5 cup corn (fresh or frozen)
- 0.25 cup fresh cilantro, chopped
- as needed lime wedges for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened and fragrant.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes until browned and cooked through.
- Stir in the diced bell pepper, chili powder, cumin, and paprika. Season with salt and pepper. Cook for another 3-4 minutes until the peppers are tender.
- While the turkey mixture cooks, prepare the lettuce wraps by rinsing and patting them dry. Set aside on a platter.
- Once the turkey mixture is done, remove it from heat. Begin assembling the wraps by placing a spoonful of the turkey mixture into the center of each lettuce leaf.
- Top each wrap with slices of avocado, halved cherry tomatoes, corn, and a sprinkle of fresh cilantro.
- Squeeze lime juice over the wraps for an extra zing, and serve immediately.
