Ingredients

  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 bag tortilla chips (about 10 oz)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 0.5 cup sliced black olives (optional)
  • 0.25 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess fat.
  3. Stir in the taco seasoning according to package instructions along with black beans, corn, and salsa. Mix well until everything is evenly combined, then remove from heat.
  4. In a greased 9x13 inch baking dish, layer half of the tortilla chips on the bottom.
  5. Spoon half of the meat mixture over the tortilla chips, followed by one cup of shredded cheddar cheese.
  6. Repeat the layering process with the remaining chips, meat mixture, and top with the remaining cheese for a cheesy top layer.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil, and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Allow it to cool for a few minutes before serving. Top each serving with a dollop of sour cream, diced tomatoes, black olives (if using), and sprinkle with fresh cilantro.
