Walking Taco Casserole Flavorful Meal for Families
Ingredients
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 bag tortilla chips (about 10 oz)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- 0.5 cup sliced black olives (optional)
- 0.25 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess fat.
- Stir in the taco seasoning according to package instructions along with black beans, corn, and salsa. Mix well until everything is evenly combined, then remove from heat.
- In a greased 9x13 inch baking dish, layer half of the tortilla chips on the bottom.
- Spoon half of the meat mixture over the tortilla chips, followed by one cup of shredded cheddar cheese.
- Repeat the layering process with the remaining chips, meat mixture, and top with the remaining cheese for a cheesy top layer.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil, and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Allow it to cool for a few minutes before serving. Top each serving with a dollop of sour cream, diced tomatoes, black olives (if using), and sprinkle with fresh cilantro.
