Whipped Shortbread Cookies Delightfully Easy Recipe
Ingredients
- 1 cup unsalted butter, softened
- 0.5 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 0.25 teaspoon salt
- 0.5 cup mini chocolate chips (optional)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream the softened butter and powdered sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
- Add the vanilla extract to the butter mixture and mix until incorporated.
- In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.
- If using, fold in the mini chocolate chips to the dough for extra flavor and texture.
- Using a cookie scoop or tablespoon, portion out the dough and shape it into small balls.
- Place the dough balls on the prepared baking sheet, about 2 inches apart. Gently press the center of each ball with a fork to slightly flatten them, leaving a small indent.
- If desired, sprinkle some colorful sprinkles on top of each cookie before baking.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden, but the centers remain soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
