Ingredients

  • 1 lb chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 limes zest
  • 3 limes juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon honey
  • to taste fresh cilantro, for garnish
  • as needed skewers (wooden or metal)

Instructions

  1. In a large mixing bowl, combine olive oil, lime zest, lime juice, minced garlic, ground cumin, smoked paprika, salt, black pepper, and honey. Whisk together until well combined.
  2. Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  4. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro before serving.
  7. Serve the skewers with lime wedges on the side for an extra zesty kick.

For extra flavor, marinate the chicken for up to 2 hours.
