Zucchini Fritters with Feta Flavorful and Easy Recipe
Ingredients
- 2 medium zucchinis, grated
- 0.5 teaspoon salt
- 0.5 cup all-purpose flour
- 1 large egg, beaten
- 1 cup feta cheese, crumbled
- 2 stalks green onions, finely chopped
- 1 clove garlic, minced
- 0.25 teaspoon black pepper
- 0.25 teaspoon paprika
- 0.25 cup fresh parsley, chopped
- as needed tablespoon olive oil for frying
Instructions
- In a large bowl, combine the grated zucchinis and salt. Let them sit for about 10 minutes to draw out excess water.
- After 10 minutes, squeeze the grated zucchinis with your hands or in a cheesecloth to remove as much moisture as possible.
- In the same bowl, add the flour, beaten egg, crumbled feta, chopped green onions, minced garlic, black pepper, paprika, and parsley to the drained zucchini. Mix everything until well combined.
- Heat a couple of tablespoons of olive oil in a non-stick skillet over medium heat.
- Once the oil is hot, scoop about two tablespoons of the zucchini mixture and flatten it slightly into a fritter shape. Repeat this process, leaving space between each fritter in the pan.
- Cook for about 3-4 minutes on each side or until they are golden brown and crispy. Remove from the skillet and drain on a paper towel.
- Continue this process until all the fritter mixture is cooked, adding more oil to the skillet as needed.
