Ingredients

  • 2 medium zucchinis, grated
  • 0.5 teaspoon salt
  • 0.5 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup feta cheese, crumbled
  • 2 stalks green onions, finely chopped
  • 1 clove garlic, minced
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 0.25 cup fresh parsley, chopped
  • as needed tablespoon olive oil for frying

Instructions

  1. In a large bowl, combine the grated zucchinis and salt. Let them sit for about 10 minutes to draw out excess water.
  2. After 10 minutes, squeeze the grated zucchinis with your hands or in a cheesecloth to remove as much moisture as possible.
  3. In the same bowl, add the flour, beaten egg, crumbled feta, chopped green onions, minced garlic, black pepper, paprika, and parsley to the drained zucchini. Mix everything until well combined.
  4. Heat a couple of tablespoons of olive oil in a non-stick skillet over medium heat.
  5. Once the oil is hot, scoop about two tablespoons of the zucchini mixture and flatten it slightly into a fritter shape. Repeat this process, leaving space between each fritter in the pan.
  6. Cook for about 3-4 minutes on each side or until they are golden brown and crispy. Remove from the skillet and drain on a paper towel.
  7. Continue this process until all the fritter mixture is cooked, adding more oil to the skillet as needed.

💡 Chef's Notes

Serve warm with a sprinkle of fresh parsley and a dollop of Greek yogurt or tzatziki sauce.
