Instructions
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil.
In a large mixing bowl, combine the softened cream cheese, sour cream, and garlic. Mix until smooth and well combined.
Add the shredded chicken, drained spinach, chopped artichoke hearts, onion powder, and red pepper flakes (if using). Season with salt and pepper to taste. Stir until all ingredients are well incorporated.
Fold in half of the mozzarella cheese and half of the Parmesan cheese into the mixture.
Pour the mixture into the prepared baking dish, spreading it out evenly.
Sprinkle the remaining mozzarella and Parmesan cheese over the top of the casserole. If using breadcrumbs, sprinkle them on top for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Notes
Serve warm, optionally garnished with fresh parsley or red pepper flakes.
