Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.25 cup shredded unsweetened coconut
  • 0.25 cup honey or maple syrup
  • 0.25 cup dark chocolate chips
  • 0.25 cup chopped almonds
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, shredded coconut, honey or maple syrup, and vanilla extract. Mix well until all ingredients are fully incorporated.
  2. Add the dark chocolate chips, chopped almonds, and sea salt to the mixture. Stir until evenly distributed.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter. If the mixture is sticky, you can dampen your hands with a little water to make rolling easier.
  4. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Once set, transfer the energy bites to an airtight container and store in the refrigerator for up to one week.

💡 Chef's Notes

Serve these energy bites in a decorative bowl for snacking. You can also sprinkle some extra shredded coconut on top for a visually appealing touch.
