This casserole is a great way to start your day. You get sausage, eggs, and cheese all in one dish. Each bite feels like a warm hug. The blend of flavors and textures makes it special.

You can use any type of bread for this dish. I love sourdough. It gives a nice crunch. Day-old bread works best. It soaks up the egg mixture well.

Cooking the sausage is the first step. Brown it in a skillet over medium heat. Break it apart as it cooks. This makes sure it cooks evenly. Once it is done, drain the fat. Set the sausage aside.

Next, use the same skillet for the veggies. Add diced onion and bell peppers to the leftover grease. Sauté them for about five minutes. This step brings out their sweet flavor.

Now, whisk the eggs and milk in a bowl. Add garlic powder, onion powder, salt, and pepper. Mix it well. This will be the base of your casserole.

Layering is key. Start with half the cubed bread at the bottom of your dish. Then, add half of the cooked sausage and veggies. Sprinkle half of the cheese on top. Repeat this process with the remaining ingredients.

Pour the egg mixture over everything. Make sure it soaks into the bread well. Cover the dish with foil and bake at 350°F for 30 minutes. After that, remove the foil and bake for another 15-20 minutes. The top will become golden and crispy.

Let the casserole cool for a few minutes. Then, slice it into squares. Garnish with fresh parsley. This adds color and a fresh taste. For an extra kick, try adding a dollop of sour cream or hot sauce.

Ingredients

1 pound breakfast sausage, casings removed

8 large eggs

2 cups milk

4 cups cubed day-old bread (preferably sourdough or whole wheat)

2 cups shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

In a large skillet, brown the sausage over medium heat until fully cooked, breaking it apart as it cooks. Drain any excess fat and set aside.

In the same skillet, add the diced onion and bell peppers to the remaining sausage grease. Sauté until they are soft, about 5 minutes.

In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

Layer half of the cubed bread at the bottom of the greased baking dish. Spread half of the cooked sausage and sautéed vegetables over the bread, followed by half the cheese.

Repeat the layering process with the remaining bread, sausage, vegetables, and top with the rest of the cheese.

Pour the egg mixture evenly over the entire casserole, ensuring it soaks into the bread.

Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue to bake for an additional 15-20 minutes, or until the eggs are set and the top is slightly golden.

Let the casserole cool for a few minutes before slicing. Garnish with freshly chopped parsley before serving.
