Sausage Egg and Cheese Breakfast Casserole

Ingredients
  

1 pound breakfast sausage, casings removed

8 large eggs

2 cups milk

4 cups cubed day-old bread (preferably sourdough or whole wheat)

2 cups shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large skillet, brown the sausage over medium heat until fully cooked, breaking it apart as it cooks. Drain any excess fat and set aside.

      In the same skillet, add the diced onion and bell peppers to the remaining sausage grease. Sauté until they are soft, about 5 minutes.

        In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Layer half of the cubed bread at the bottom of the greased baking dish. Spread half of the cooked sausage and sautéed vegetables over the bread, followed by half the cheese.

            Repeat the layering process with the remaining bread, sausage, vegetables, and top with the rest of the cheese.

              Pour the egg mixture evenly over the entire casserole, ensuring it soaks into the bread.

                Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue to bake for an additional 15-20 minutes, or until the eggs are set and the top is slightly golden.

                  Let the casserole cool for a few minutes before slicing. Garnish with freshly chopped parsley before serving.
