1 cup cooked and crumbled breakfast sausage

½ cup shredded cheddar cheese

½ cup diced bell peppers (any color)

¼ cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Cooking spray or olive oil spray

Prepare the Filling: In a large bowl, combine the scrambled eggs, cooked sausage, shredded cheddar cheese, diced bell peppers, green onions, garlic powder, chili powder, salt, and pepper. Mix until well combined.

    Assemble Taquitos: Place about 2 tablespoons of the filling mixture in the center of each tortilla. Roll the tortilla tightly, tucking in the sides as you go to secure the filling. Place seam-side down on a plate.
