In a mixing bowl, combine the shredded chicken, mozzarella cheese, chopped spinach, sun-dried tomatoes, Italian seasoning, salt, and pepper. Stir until all ingredients are well mixed.
Lay out the tortilla wraps on a clean surface. Divide the chicken and cheese mixture evenly among the tortillas, placing it in the center of each wrap.
Fold in the sides of the tortilla and then roll it up tightly from the bottom to create a wrap.
Brush or spray the outside of each wrap with olive oil to help them crisp up in the air fryer.
Preheat your air fryer to 375°F (190°C).
Place the wraps in the air fryer basket in a single layer, making sure not to overcrowd.
Cook for 8-10 minutes or until the wraps are golden brown and crispy, flipping halfway through for even cooking.
Once cooked, remove from the air fryer and let them cool slightly before slicing them in half.

Serve with marinara sauce for dipping and garnish with fresh basil or parsley.
