1 cup egg whites (about 8-10 large eggs)

1 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon cream of tartar

1 cup cake flour, sifted

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Preheat your oven to 350°F (175°C). Prepare a tube pan by ensuring it is clean and dry. Do not grease the pan, as this will prevent the batter from climbing the sides during baking.

    Whip the Egg Whites: In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add cream of tartar and continue to beat until soft peaks form.

      Add Sugar and Vanilla: Gradually add 1 cup of granulated sugar while beating on high speed until stiff, glossy peaks form. Then, fold in the vanilla extract gently.

        Combine with Dry Ingredients: In a separate bowl, sift together the cake flour and salt. Carefully fold the dry ingredients into the whipped egg whites using a rubber spatula, making sure not to deflate the mixture.

          Bake: Pour the batter into the prepared tube pan. Bake for 25-30 minutes or until the cake is golden and springs back when touched. Once done, invert the pan to cool upside down until completely cool.

            Cut into Bites: Once the cake is cool, carefully remove it from the pan and cut it into 1-inch cubes or bite-sized pieces.

              Prepare Coating: In a shallow dish, mix 1 cup of granulated sugar with 2 teaspoons of ground cinnamon and set aside.

                Heat Oil: In a large pot, heat oil over medium-high heat for frying. You will need about 2 inches of oil for frying the churro bites.

                  Fry the Bites: Carefully fry the angel food cake pieces in batches for about 1-2 minutes, or until they are golden brown. Use a slotted spoon to transfer the fried bites to a paper towel-lined plate to drain excess oil.

                    Coat with Sugar: While the churro bites are still warm, roll them in the cinnamon-sugar mixture until well coated.
