2 large flour tortillas

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 large apple, diced (preferably Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1/4 cup granola

Whipped cream, for garnish

Caramel sauce, for drizzling

Begin by preparing the apple filling. In a bowl, combine the diced apples, lemon juice, and ground cinnamon. Toss until the apples are well-coated. Set aside.

    In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth.

      Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and cook for about 30 seconds on each side until warm and slightly golden. Repeat with the second tortilla.

        Once the tortillas are warm, spread a generous layer of the cream cheese mixture onto each tortilla.

          Spoon a portion of the cinnamon-coated apples onto one side of each tortilla.

            Fold the tortillas in half to create a taco shape.

              Top the tacos with a sprinkle of granola for added crunch.
