Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

2 tablespoons sugar

1 cup milk

1 large egg

1 tablespoon vanilla extract

2 tablespoons melted butter

1 large apple, peeled, cored, and finely diced (preferably Granny Smith)

1/4 cup chopped walnuts (optional)

Maple syrup for drizzling

Powdered sugar for garnish

Instructions

In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar until well combined.

In a separate bowl, combine the milk, egg, vanilla extract, and melted butter. Mix until fully combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing; some lumps are okay.

Gently fold in the diced apple and walnuts (if using) into the batter.

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a little butter or oil.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

Repeat with the remaining batter, adjusting the heat as needed to prevent burning.

Serve hot, drizzled with maple syrup and sprinkled with powdered sugar.
