For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the apple pie filling:

3 medium apples (such as Granny Smith), peeled and diced

½ cup brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

For the cheesecake batter:

16 oz cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

¼ cup all-purpose flour

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set aside.

    Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until fully combined. Press the mixture evenly into the bottom of the springform pan to create the crust. Bake for 10 minutes, then remove and let it cool.

      Prepare the Apple Filling: In a skillet over medium heat, add the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir and cook for about 5-7 minutes, until the apples are slightly softened. Remove from heat and let cool.

        Make the Cheesecake Batter: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar and vanilla, mixing well. Add eggs one at a time, mixing thoroughly after each addition. Then add sour cream and flour, mixing until just combined.

          Assemble the Cheesecake: Pour half of the cheesecake batter over the cooled crust. Spread the apple pie filling evenly over the batter, then pour the remaining cheesecake batter on top. Smooth the surface with a spatula.
