2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

2 large onions, finely chopped

4 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon caraway seeds (optional)

1 teaspoon dried thyme

2 bell peppers (red and green), diced

2 cups beef broth

1 can (15 oz) diced tomatoes, with juice

2 medium potatoes, peeled and diced

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

Heat the vegetable oil in a large, heavy-bottomed pot over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside the browned beef.

    In the same pot, add the chopped onions and cook until they are translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the sweet paprika, caraway seeds (if using), and thyme, cooking for about 2 minutes to allow the spices to bloom.

        Add the diced bell peppers and return the browned beef to the pot. Stir everything well to combine.

          Pour in the beef broth and diced tomatoes, stirring to mix all the ingredients. Bring the mixture to a simmer.

            Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, stirring occasionally, until the beef is tender.

              Once the beef is tender, add the diced potatoes to the pot. Continue simmering for an additional 25-30 minutes, or until the potatoes are cooked through and soft.

                Season the goulash with salt and pepper to taste, adjusting the flavors as needed.

                  Serve hot, garnished with chopped fresh parsley.
