1 red bell pepper, diced

1 jalapeño, deseeded and minced (optional for spice)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

1/4 teaspoon ground cumin

1/4 teaspoon smoked paprika

Instructions

In a large mixing bowl, combine the diced mango and avocados.

Add the finely chopped red onion and diced red bell pepper to the bowl. If you like some heat, stir in the minced jalapeño.

Toss in the chopped cilantro for a fresh flavor kick.

In a small bowl, whisk together the lime juice, olive oil, ground cumin, smoked paprika, salt, and pepper.

Pour the dressing over the salad mixture and gently toss everything together, being careful not to mash the avocado.

Taste and adjust seasoning if needed, adding more lime juice or salt to suit your preference.

Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
