Avocado Bacon Grilled Cheese Sandwich

Ingredients
  

2 slices of sourdough bread

1 ripe avocado, sliced

4 strips of cooked bacon, crispy

2 slices of sharp cheddar cheese

2 tablespoons mayonnaise

1 tablespoon butter

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for heat

Instructions
 

Begin by heating a skillet over medium heat.

    While the skillet warms, spread 1 tablespoon of mayonnaise evenly on one side of each slice of sourdough bread.

      Place one slice of bread mayo-side down in the skillet.

        Layer one slice of cheddar cheese onto the bread in the skillet.

          Next, gently place the sliced avocado on top of the cheese. Season with salt, pepper, and optional red pepper flakes if you prefer some heat.

            Add the crispy bacon strips atop the avocado.

              Top the bacon with the second slice of cheddar, then place the second slice of sourdough bread on top, mayonnaise-side up.

                Cook until the bottom slice is golden brown and crispy, about 3-4 minutes.

                  Carefully flip the sandwich, and add the butter to the skillet around the edges. Cook for another 3-4 minutes until the second side is golden brown and the cheese is melted.

                    Remove from the skillet and let cool for a minute before slicing in half.
