1 ripe avocado, diced

1 cup fresh or canned corn, drained

1 small red onion, finely chopped

1 jalapeño pepper, deseeded and minced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

In a large mixing bowl, combine the diced avocado and corn. Gently fold them together to avoid mashing the avocado.
