8 slices of crispy bacon, chopped

1 medium onion, diced

1 bell pepper (any color), diced

8 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups frozen hash browns

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    In a skillet over medium heat, cook the bacon pieces until crispy. Remove with a slotted spoon and drain on paper towels.

      In the same skillet, sauté the diced onion and bell pepper in the leftover bacon grease until softened, about 3-4 minutes. Remove from heat.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and pepper.

          Layer the frozen hash browns evenly in the prepared baking dish. Top with the cooked bacon, sautéed onions, and bell peppers.

            Pour the egg mixture over the top, ensuring everything is well distributed.

              Sprinkle shredded cheddar cheese evenly over the casserole.

                Bake in the preheated oven for 30-35 minutes or until the eggs are set and the cheese is bubbly and golden.

                  Once done, let it cool for about 5 minutes before slicing. Garnish with freshly chopped parsley before serving.
