Ingredients
  

4 large eggs

2 cups fresh spinach, chopped

½ cup feta cheese, crumbled

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium tomato, diced

1 tablespoon olive oil

½ teaspoon paprika

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In an oven-safe skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add the minced garlic and diced tomato to the skillet; cook for another 2-3 minutes until the tomatoes soften.

        Stir in the chopped spinach and cook until wilted, about 2 minutes.

          Once the spinach has wilted, spread the sautéed mixture evenly in the skillet.

            Make 4 small wells in the mixture, then crack an egg into each well.

              Sprinkle the crumbled feta cheese and paprika over the top. Season with salt and pepper.

                Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set but the yolks are still runny.

                  Remove from the oven and garnish with fresh parsley before serving.
