Ingredients

2 ribeye steaks (about 1-inch thick)

1 cup cherry tomatoes, halved

1 (8 oz) ball fresh mozzarella, sliced

1/4 cup fresh basil leaves, chopped

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Marinate the Steak: In a small bowl, whisk together balsamic vinegar, olive oil, garlic powder, salt, and pepper. Place the ribeye steaks in a resealable bag or shallow dish and pour the marinade over. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for enhanced flavor.

Prepare the Caprese Topping: While the steak is marinating, combine the halved cherry tomatoes, sliced mozzarella, and chopped basil in a bowl. Drizzle with a little olive oil and season with salt and pepper. Toss gently to combine and set aside.

Preheat the Grill: Heat your grill to medium-high heat, about 400°F (200°C). Ensure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Steak: Remove the steaks from the marinade and shake off any excess. Place them directly on the preheated grill. Grill for about 4-5 minutes on each side for medium-rare, adjusting the time according to your preferred level of doneness.

Rest the Steaks: Once grilled to your liking, transfer the steaks to a cutting board. Let them rest for at least 5 minutes before slicing to allow the juices to redistribute.

Top with Caprese Salad: After resting, slice the steak against the grain and arrange it on a serving platter. Generously top each slice with the Caprese mixture of tomatoes, mozzarella, and basil.

Serve: Drizzle any remaining balsamic marinade on top for added flavor before serving.

                Prep Time: 15 min | Total Time: 50 min | Servings: 2

                  - Presentation Tips: Arrange the sliced steak on a wooden cutting board or a rustic platter, scatter additional basil leaves around the dish, and finish with a drizzle of balsamic reduction for an elegant touch.
