3 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/4 teaspoon ground cinnamon

1/2 cup chopped walnuts (optional)

1/4 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with cooking spray or line it with parchment paper.

    In a mixing bowl, combine the mashed bananas and melted coconut oil, stirring until well blended.

      Add the brown sugar to the banana mixture and mix thoroughly.

        Stir in the beaten egg and vanilla extract until combined.

          Sprinkle the baking soda and salt over the mixture and stir to incorporate.

            Gradually add the all-purpose flour and ground cinnamon, mixing gently just until the flour is hidden. Avoid over-mixing.

              If desired, fold in the chopped walnuts and chocolate chips for added texture and flavor.

                Pour the batter into the prepared loaf pan and smooth the top.

                  Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
