2 ripe bananas, mashed

8 oz (225g) cream cheese, softened

1 cup (120g) powdered sugar

1 teaspoon vanilla extract

1 cup (240ml) heavy whipping cream

1 cup (90g) graham cracker crumbs

1/4 cup (50g) unsalted butter, melted

1/2 teaspoon cinnamon

Sliced bananas and mint leaves for garnish

Instructions
 

Prepare the crust: In a bowl, combine the graham cracker crumbs, melted butter, and cinnamon. Mix until the crumbs are well coated.

    Press the crust: Firmly press the crumb mixture into the bottom of a 9-inch springform pan to form an even layer. Set aside.

      Make the filling: In a large bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and fluffy, about 2 minutes.

        Add other filling ingredients: Add in the mashed bananas, powdered sugar, and vanilla extract. Beat again until the mixture is completely combined and creamy.

          Whip the cream: In another bowl, whip the heavy whipping cream until stiff peaks form.

            Fold in the cream: Gently fold the whipped cream into the banana cream cheese mixture until just combined, being careful not to deflate the whipped cream.

              Assemble the cheesecake: Pour the filling onto the prepared crust in the springform pan, smoothing the top with a spatula.

                Chill: Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.

                  Serve: Once set, carefully remove the sides of the springform pan. Slice the cheesecake, garnishing each piece with sliced bananas and mint leaves if desired.
