1 pound shrimp, peeled and deveined

1 teaspoon garlic powder

1 teaspoon paprika

1 cup cornstarch

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon sesame oil

1 head of butter lettuce, leaves separated

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Start by seasoning the shrimp with garlic powder, paprika, salt, and pepper in a bowl. Set aside and let it marinate for at least 15 minutes.

    Set up a breading station: Place the cornstarch in one bowl, buttermilk in another, and panko breadcrumbs in a third.

      Dredge each shrimp in cornstarch, shaking off excess. Next, dip it into the buttermilk, then coat with panko breadcrumbs, pressing gently to adhere.

        Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.

          Fry the shrimp in batches for about 2-3 minutes until golden brown and crispy, flipping halfway through. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and sesame oil. Mix well to create a creamy bang bang sauce.

              To assemble, take a butter lettuce leaf and place a few shrimp in each cup. Drizzle with the bang bang sauce and sprinkle with chopped green onions and sesame seeds as garnish.

                Serve immediately for the best crunch.
