6 pork sausages (your choice: spicy, herb-infused, or classic)

4 large Yukon Gold potatoes, peeled and quartered

1 cup whole milk

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon all-purpose flour

2 cups chicken broth

¾ cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the quartered potatoes and cover them with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

    Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook for about 8-10 minutes until browned and cooked through, turning occasionally. Remove the sausages and set aside.

      Make the Garlic Butter: In the same skillet, add the minced garlic and butter and sauté for 1-2 minutes until fragrant. Stir in the thyme and cook for another minute.

        Prepare the Gravy: Sprinkle the flour over the garlic mixture and stir for about a minute. Gradually whisk in the chicken broth, ensuring there are no lumps. Cook until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.

          Mash the Potatoes: Once the potatoes are cooked, drain them and return to the pot. Add the warm milk, remaining butter, and mash until smooth. Season with salt and pepper to taste.

            Combine: If using peas, stir them into the gravy just before serving. Serve the sausages on a bed of creamy mashed potatoes smothered in the garlic gravy.

              Garnish: Sprinkle freshly chopped parsley over the dish for added flavor and color.
