4 pork sausages (preferably a mix of spicy and mild)

4 large Yukon Gold potatoes, peeled and chopped

1/2 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 medium onion, finely sliced

1 garlic clove, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon fresh thyme leaves

Salt and pepper to taste

Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook for about 12-15 minutes, turning occasionally, until they are browned and cooked through. Remove from the skillet and set aside.

    Prepare the Mash: While the sausages are cooking, place the chopped potatoes in a pot of cold salted water. Bring to a boil and cook for 15-20 minutes until tender. Drain the potatoes.

      Mash the Potatoes: In the same pot, add the butter and milk to the drained potatoes. Mash until creamy and smooth. Season with salt and pepper to taste. Keep warm.

        Make the Onion Gravy: In the same skillet used for sausages, add the sliced onion and cook over medium heat for about 5-7 minutes until softened and slightly caramelized. Add the minced garlic and cook for another minute.

          Finish the Gravy: Pour in the chicken broth, Worcestershire sauce, and add the fresh thyme. Stir, scraping any bits from the bottom of the skillet. Let it simmer for 5-10 minutes until slightly thickened.

            Serve: Plate a generous scoop of creamy mash on each plate, place two sausages on top, and pour the rich onion gravy over everything.
