4 pork sausages (or your choice of chicken or vegetarian sausages)

4 large potatoes, peeled and diced

1/2 cup milk

4 tablespoons butter

Salt and pepper to taste

1 large onion, thinly sliced

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Cook the Sausages: In a large skillet over medium heat, cook the sausages until browned and cooked through, about 15-20 minutes. Turn occasionally for even browning. Once done, remove from the skillet and set aside, covering them to keep warm.

    Boil the Potatoes: While the sausages are cooking, place the diced potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 15 minutes. Drain the potatoes and return to the pot.

      Mash the Potatoes: Add the milk and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

        Make the Onion Gravy: In the same skillet used for the sausages, add the sliced onions and cook over medium heat until they are soft and caramelized, about 10 minutes. Stir occasionally to prevent burning.

          Thicken the Gravy: Sprinkle the flour over the caramelized onions and stir well to combine. Cook for 1-2 minutes, allowing the flour to cook slightly. Gradually pour in the broth while whisking to avoid lumps.
