2 lbs beef chuck, cut into 1.5-inch cubes

2 tablespoons all-purpose flour

4 tablespoons olive oil

2 large onions, thinly sliced

4 cloves garlic, minced

3 cups beef broth

1 tablespoon apple cider vinegar

2 tablespoons brown sugar

2 teaspoons dried thyme

1 bay leaf

4 large carrots, peeled and sliced into rounds

2 cups mushrooms, quartered

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large bowl, toss the beef cubes with flour, seasoning with salt and pepper.

    In a Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches and brown on all sides. Remove and set aside.

      In the same pot, add the remaining olive oil and sauté the sliced onions until translucent, about 5-7 minutes. Add minced garlic and cook for an additional minute.

        Return the browned beef to the pot and pour in the beef broth, stirring to combine. Add apple cider vinegar, brown sugar, thyme, and bay leaf.

          Bring to a simmer, then reduce heat to low, cover, and let it cook for 1 hour.

            After 1 hour, add the sliced carrots and mushrooms into the stew. Stir gently, cover, and cook for another 30-40 minutes, or until the beef is tender.

              Remove the bay leaf before serving and taste to adjust seasoning with salt and pepper as needed.
