1 lb ground beef

1 cup chopped onion

1 cup chopped bell pepper (any color)

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup sour cream (optional, for serving)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula until fully cooked. Drain any excess fat.

      Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5-7 minutes.

        Stir in the black beans, corn, diced tomatoes (with juice), cooked rice, chili powder, cumin, salt, and pepper. Mix well and cook for an additional 5 minutes to combine the flavors.

          Transfer the beef and vegetable mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Sprinkle the shredded cheddar cheese over the top of the casserole.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Allow the casserole to cool for a few minutes before serving.

                    Optional: Serve with a dollop of sour cream on top and garnish with fresh cilantro if desired.
