Beefy Meatball Sub

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 clove garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon onion powder

2 cups marinara sauce

4 sub rolls

1 cup shredded mozzarella cheese

Prepare the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, black pepper, oregano, and onion powder. Mix the ingredients until just combined; do not overmix.

    Shape the Meatballs: Using your hands, shape the mixture into meatballs, about 1.5 inches in diameter. You should have approximately 12-14 meatballs.

      Cook the Meatballs: In a large skillet, heat olive oil over medium heat. Once hot, add the meatballs in a single layer. Cook for about 5-6 minutes, turning occasionally, until they are browned on all sides.

        Add Marinara Sauce: Pour the marinara sauce over the meatballs in the skillet. Cover and simmer for 10-15 minutes, until the meatballs are cooked through (internal temperature should reach 160°F).

          Prepare the Subs: While the meatballs are cooking, preheat your oven to 375°F (190°C). Slice open the sub rolls without cutting all the way through, creating a pocket for the meatballs.

            Assemble the Subs: In each sub roll, place 2-3 meatballs along with a generous spoonful of marinara sauce. Top with shredded mozzarella cheese.

              Bake: Place the assembled subs on a baking sheet and bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.

                Serve: Remove from the oven, let cool for a minute, and serve hot, garnished with extra chopped parsley if desired.
