Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup mashed ripe bananas (about 2 bananas)

1/2 cup buttermilk

1 cup vanilla pudding (instant or homemade)

1/2 cup crushed vanilla wafer cookies

Whipped cream for topping

Sliced bananas for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Flavoring: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.

Add Pudding and Cookies: Gently fold in the vanilla pudding and crushed vanilla wafers until blended into the batter.

Bake: Fill each cupcake liner about two-thirds full with batter. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cupcakes: Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Top and Serve: Once cooled, generously pipe or spoon whipped cream on top of each cupcake, then garnish with sliced bananas and a sprinkle of crushed vanilla wafers.
