2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup shredded cheddar cheese

1 cup diced green chilies (canned or fresh)

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small flour tortillas

1 cup enchilada sauce (store-bought or homemade)

Fresh cilantro leaves for garnish

Sour cream for serving (optional)

Avocado slices for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a large bowl, combine the shredded chicken, ricotta cheese, half of the cheddar cheese, diced green chilies, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well blended.

      Prepare Tortillas: Lightly warm the tortillas in a microwave for about 20 seconds to make them pliable.

        Fill Tortillas: Spoon about 1/4 cup of the chicken filling onto each tortilla. Roll them up tightly and place them seam-side down in a greased 9x13 inch baking dish.

          Add Sauce: Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are well covered. Sprinkle the remaining cheddar cheese on top.

            Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Once done, remove from the oven and let it cool for a couple of minutes. Garnish with fresh cilantro leaves. Serve with sour cream and avocado slices on the side if desired.
