4 large buttery croissants

4 large eggs

1/4 cup whole milk

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1 cup cheddar cheese, shredded

1 tablespoon olive oil

4 slices of crispy bacon or turkey bacon (optional)

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Egg Mixture: In a bowl, whisk together the eggs and milk. Season with salt and pepper. Set aside.

      Sauté the Spinach: In a medium pan, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        Cook the Tomatoes: In the same pan, add the halved cherry tomatoes and cook for 2 minutes, just until slightly soft. Mix with the sautéed spinach.

          Prepare Croissants: Slice the croissants in half horizontally and place them on a baking sheet, cut side up.

            Load the Filling: Evenly distribute the spinach and tomato mixture on the bottom halves of the croissants. Then pour the egg mixture over them, allowing it to soak in a little.

              Add Cheese and Bacon: Sprinkle shredded cheddar cheese on top. If using, add the crispy bacon on top layer.

                Close the Sandwiches: Place the top halves of the croissants back on the filled bottoms.

                  Bake: Bake sandwiches in the preheated oven for 12-15 minutes, or until the cheese is melted, and the croissants are golden brown.
