2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 tablespoon honey

1/2 cup shredded cheddar cheese (optional)

2 tablespoons fresh chives, chopped (optional)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold cubed butter into the flour mixture. Use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.

        In a separate bowl, mix the buttermilk and honey together until combined.

          Pour the buttermilk mixture into the flour mixture and stir gently until just combined. If you’re adding cheese and chives, fold them in now.

            Turn the dough onto a floured surface and gently knead it a couple of times until it comes together. Pat it into a rectangular shape about 1 inch thick.

              Using a floured biscuit cutter, cut out biscuits from the dough, making sure to press straight down without twisting. Place the biscuits on the prepared baking sheet.

                Re-knead the remaining dough and cut out additional biscuits until all the dough is used.

                  Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

                    Remove from oven and let cool for a few minutes before serving. Optionally, brush with melted butter for added richness.
