Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

6 cups mixed greens (spinach, arugula, and lettuce)

1 cup fresh blackberries

1/2 cup crumbled feta cheese

1/4 cup chopped walnuts (toasted for extra flavor)

1/4 red onion, thinly sliced

1/4 cup balsamic vinaigrette

Fresh mint leaves for garnish (optional)

Instructions

Cook the Chicken: Preheat your grill or skillet over medium-high heat. Rub the chicken breasts with olive oil and season with salt and pepper. Grill or sauté the chicken for 6-7 minutes on each side, or until thoroughly cooked (internal temperature of 165°F). Remove from heat and let rest for 5 minutes before slicing into strips.

Prepare the Salad Base: In a large salad bowl, combine the mixed greens. Add the sliced red onion and toss gently to mix.

Add the Toppings: Scatter the fresh blackberries, crumbled feta cheese, and toasted walnuts over the greens.

Dress the Salad: Drizzle the balsamic vinaigrette over the salad. Gently toss everything together to ensure that the greens and toppings are well coated.

Final Touch: Arrange the sliced grilled chicken on top of the salad. Garnish with fresh mint leaves if desired for an extra touch of freshness.

Serve: Enjoy your Blackberry Chicken Salad as a light lunch or dinner!
