Blackberry & Goat Cheese Grilled Cheese Recipe

4 slices of sourdough bread

4 oz goat cheese, softened

1 cup fresh blackberries

2 tablespoons honey

1 tablespoon fresh thyme leaves (optional)

2 tablespoons unsalted butter

Salt and pepper to taste

Prepare the Blackberry Mixture: In a small bowl, combine the fresh blackberries, honey, thyme leaves, and a pinch of salt and pepper. Gently mash the blackberries with a fork to create a chunky mixture while still leaving some whole. Set aside.

    Assemble the Sandwich: Take two slices of sourdough bread and spread a generous layer of goat cheese on each slice. Top one of the slices with a spoonful of the blackberry mixture, spreading it evenly over the goat cheese. Place the second slice on top, goat cheese side down, to form a sandwich. Repeat with the remaining slices to make a second sandwich.

      Cook the Sandwiches: Heat a non-stick skillet over medium heat. Add one tablespoon of butter and let it melt. Place one of the sandwiches in the skillet. Cook for about 3-4 minutes, or until the bread is golden brown and crispy. Carefully flip the sandwich and add the remaining tablespoon of butter to the skillet. Cook for an additional 3-4 minutes until the other side is golden and the goat cheese is warm and slightly melted.

        Serve: Remove the sandwich from the skillet and slice it in half. Serve it warm, drizzling any remaining blackberry mixture on top or to the side for dipping.
