1 cup fresh blackberries

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

Rinse the blackberries under cool water and place them in a medium saucepan. Gently crush the berries with a fork or potato masher to release their juices.

    Add the granulated sugar and water to the saucepan with the crushed blackberries. Stir until the sugar starts to dissolve.

      Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to ensure the sugar fully dissolves and the blackberries infuse their flavor.

        Once the syrup reaches a simmer, reduce the heat to low and add the lemon juice and optional lemon zest. Allow the syrup to simmer for about 10-15 minutes, continuing to stir occasionally.

          Remove the saucepan from heat and let it cool slightly.

            Strain the syrup through a fine-mesh sieve into a clean glass jar or bottle, pressing down on the solids with the back of a spoon to extract as much liquid as possible.

              Once fully cooled, seal the jar or bottle and store it in the refrigerator for up to 2 weeks.
