4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

½ cup cream cheese, softened

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper to taste

Lemon wedges for serving

Prepare the Spinach Filling: In a pan over medium heat, add the olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.

    Add Spinach: Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

      Make the Creamy Filling: In a bowl, combine the wilted spinach, cream cheese, and grated Parmesan cheese. Mix until well combined. Season with salt and pepper to taste.

        Prepare the Salmon: Preheat the oven to 375°F (190°C). Using a sharp knife, create a pocket in each salmon fillet by slicing through the thicker side, but don’t cut all the way through.

          Stuff the Salmon: Spoon the creamy spinach filling into each salmon pocket, dividing it evenly among the fillets.

            Season the Fillets: In a small bowl, mix together smoked paprika, cayenne pepper, onion powder, dried thyme, salt, and pepper. Rub this seasoning mixture over the outside of each stuffed salmon fillet.

              Blacken the Salmon: Heat a non-stick skillet over medium-high heat. Add a little olive oil, and once hot, sear the stuffed salmon fillets for 3-4 minutes on each side until golden brown.

                Bake the Salmon: Transfer the seared salmon to a baking dish and bake in the preheated oven for an additional 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
