4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

Lemon wedges, for serving

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and chopped spinach. Sauté for about 2-3 minutes, or until the spinach is wilted.

      In a bowl, combine the sautéed spinach and garlic, grated Parmesan, and softened cream cheese. Mix until well blended. Season with salt and pepper to taste. This will be your stuffing.

        Using a sharp knife, cut a pocket in each salmon fillet by slicing horizontally, but not all the way through. Stuff each pocket with the spinach and cheese mixture, pressing it down gently.

          In a small bowl, mix together the smoked paprika, cayenne pepper, salt, and pepper. Rub this spice mixture over the outside of each stuffed salmon fillet.

            Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat. Add the stuffed salmon fillets and sear for about 2-3 minutes on each side until they develop a golden color.

              Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes, or until the salmon flakes easily with a fork.

                Remove from the oven and let rest for a minute before serving.
