8 ounces cavatappi pasta

1 pound large shrimp, peeled and deveined

2 tablespoons blackening seasoning (store-bought or homemade)

2 tablespoons olive oil, divided

1 red bell pepper, diced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Begin by cooking the cavatappi pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

    While the pasta cooks, place the shrimp in a bowl and toss them with the blackening seasoning until evenly coated.

      In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Once hot, add the seasoned shrimp and cook for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.

        In the same skillet, add another tablespoon of olive oil. Add the diced red bell pepper and cook for about 2-3 minutes until it begins to soften.

          Stir in the halved cherry tomatoes and minced garlic, cooking for an additional 1-2 minutes until fragrant.

            Sprinkle in the smoked paprika and then pour in the heavy cream, stirring to combine. Allow the mixture to simmer for a few minutes until it starts to thicken.

              Add the cooked cavatappi pasta and the blackened shrimp to the skillet, tossing everything together to ensure the pasta is well coated in the creamy sauce. Stir in the grated Parmesan cheese and mix until melted and well combined.

                Taste and adjust seasoning with salt and pepper as desired.

                  Serve the Blackened Shrimp Cavatappi hot, garnished with freshly chopped parsley.
