1 cup fresh blueberries (plus a few extra for topping)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup sugar

1/2 cup cream cheese, softened

1/3 cup vegetable oil

1/3 cup milk (dairy or non-dairy)

1 large egg

1 teaspoon vanilla extract

1 tablespoon lemon zest

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cups with non-stick spray.

    In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, sugar, and ground cinnamon (if using).

      In another bowl, mix the softened cream cheese until smooth. Then, add vegetable oil, milk, egg, vanilla extract, and lemon zest. Whisk until fully combined and creamy.

        Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; it's okay if there are small lumps.

          Carefully fold in the fresh blueberries, ensuring they are evenly distributed but not crushed.

            Scoop the batter into the prepared muffin cups, filling each about 2/3 full. Top with a few extra blueberries for a beautiful finish.

              Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
