6 large eggs

2 cups diced potatoes (fresh or frozen)

1 cup cooked breakfast sausage, crumbled

1 onion, diced

1 bell pepper (red or green), diced

1 cup shredded cheddar cheese

1 cup milk

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5-7 minutes.

      Stir in the diced potatoes and sauté for an additional 10-12 minutes, stirring occasionally, until the potatoes are tender and lightly browned. If using frozen potatoes, follow the cooking time suggested on the package.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

          Spread the cooked sausage evenly across the bottom of a greased 9x13 inch baking dish.

            Layer the sautéed vegetables over the sausage.

              Pour the egg mixture over the sausage and vegetables, making sure everything is evenly coated.

                Sprinkle shredded cheddar cheese on top of the casserole.

                  Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.

                    Remove from the oven and let it cool for a few minutes before slicing.

                      Garnish with freshly chopped parsley before serving.
