Breakfast Chili and Eggs

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 small red bell pepper, chopped

1 small onion, diced

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

4 large eggs

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Avocado slices (optional)

Instructions
 

In a medium skillet over medium heat, add the olive oil. Once hot, sauté the diced onion and red bell pepper for about 3-4 minutes until the onion is translucent.

    Add the minced garlic to the skillet, cooking for an additional minute until fragrant.

      Stir in the black beans, diced tomatoes (with their juices), cumin, smoked paprika, chili powder, salt, and pepper. Let the mixture simmer for about 8-10 minutes until heated through and slightly thickened. Stir occasionally.

        While the chili simmers, create four small wells in the chili mixture using the back of a spoon. Crack an egg into each well.

          Cover the skillet with a lid and let it cook for about 5-7 minutes or until the eggs are set to your desired doneness (cook longer for firmer yolks).

            Once the eggs are cooked, remove the skillet from heat and garnish with fresh cilantro and slices of avocado if desired.
