Ingredients
  

2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

5 tablespoons cold water

1 cup scrambled eggs (about 5 eggs)

1/2 cup cooked and crumbled sausage (or veggie sausage for a vegetarian option)

1/2 cup shredded cheddar cheese

1/4 cup diced bell pepper

1/4 cup finely chopped green onions

Salt and pepper to taste

1 egg, beaten (for egg wash)

Instructions
 

In a large mixing bowl, combine the flour and salt.

    Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

      Gradually add cold water, one tablespoon at a time, mixing until a dough forms.

        Turn the dough out onto a floured surface and knead gently for about a minute. Divide into two discs, wrap in plastic, and refrigerate for at least 30 minutes.

          While the dough is chilling, prepare the filling: In a skillet over medium heat, scramble the eggs until just set, then remove from heat and let cool slightly.

            In a large bowl, combine the scrambled eggs, crumbled sausage, cheddar cheese, diced bell pepper, and green onions. Season with salt and pepper to taste. Set aside.

              Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

                On a floured surface, roll out one disc of dough to about 1/8-inch thickness. Use a round cutter (about 6 inches in diameter) to cut out circles.

                  Place a generous spoonful of the egg mixture onto one half of each circle. Moisten the edges with water, then fold the other half over the filling and press the edges together to seal. Crimp with a fork for a decorative border.

                    Place the hand pies on the prepared baking sheet. Brush the tops with beaten egg for a golden finish.

                      Repeat with the second disc of dough and remaining filling.

                        Bake in the preheated oven for 25-30 minutes, or until the pies are golden brown.
